Cheesy muffins with zucchini and carrot

This is a winner at the cake stalls – while people showing up at the election cake stall at 9am, they may not want a cup cake.


Recipe is as follow:


  • 3 zucchini, grated
  • 1 carrot, grated
  • 1 onion, grated
  • 1/2 capsicum, chopped
  • 6 eggs
  • 1 cup self raising flour
  • 3 bacon rashers
  • 1 cup tasty cheese
  • 150g ricotta cheese
  • 1 pinch of salt


  • Mix all ingredients
  • Line a baking tray with baking paper; fill the tray with ingredient;  alternatively, you can use a 12 hole muffin pan with cup cake liners
  • Bake in a preheat oven at 180c for approx 40 minutes if use a tray;  or 20-25 minute if use a muffin pan
