Soba noodles with pearl mushrooms (vegan)
I walked pass an Asian grocery store today and saw some beautiful pearl mushrooms at the front. I could not help myself – I had a visual of a bowl of juicy noodles with deep dark soy & sesame flavor. And here it is…
Recipe is as follow:
Ingredients
(Serves 2)
- 90g soba noodles
- a handful of garlic chive, approx 50g, thinly sliced
- approx 150g pearl mushrooms, washed & base removed (if any large pieces, slice in half)
- 2 tsp mushroom soy sauce
- 2 tsp sesame oil
- 1 tsp sugar
- cooking oil
- toasted sesame seeds, to garnish (optional)
Method
- Cook the soba noodles according to instruction on the package – normally boiling for 3-5 minutes; drain & run under cold water to refresh, then drain again; add 1 tsp sesame oil & 1 tsp mushroom soy sauce, mix well
- Heat up some cooking oil in a frying pan; saute the garlic chive and mushrooms briefly; add sugar, 1 tsp sesame oil and 1 tsp mushroom soy sauce; saute briefly; remove from heat
- Add the garlic chive and mushrooms to the soba noodles; mix well
- Garnish with sesame seeds (optional)
