Simple fried rice of eggs, vegetables and turmeric (FODMAP friendly)

Fried rice with eggs, carrot, lettuce and green beans, spiced with turmeric.

Ingredients

  • 2 cups of cooked rice
  • 2 eggs
  • 12 green bean, diced
  • 1/2 carrot, julienne
  • 50g lettuce
  • 1 chili, sliced (optional)
  • 1 tsp turmeric
  • 1 tsp cumin
  • Cooking oil
  • Salt and black pepper

Method

  • Heat up some cooking oil in a hot frying pan, add eggs, scramble the eggs until just cooked; remove the egg from the frying pan.
  • Heat up cooking oil in a hot frying pan, add green bean and chili, sauté unit just cooked; add carrot, sauté briefly; add rice, eggs, turmeric, cumin, salt and pepper, stir fry and mix well; add lettuce, mix well; remove from heat and serve.
