Chilled carrot soup with kaffir lime leafs, ginger, turmeric & coconut milk (FODMAP friendly, gluten free)

We have a small kaffir lime tree growing in a pot next to the swimming pool. It was growing so wildly I have to give it a good prune. What can I cook with such beautiful aromatic leafs?

For lunch we had a spicy Asian influenced carrot soup with carrot, potato, kaffir lime leafs, ginger, turmeric, coriander, chilies and spices. It was gorgeous served chilled on a hot summer day.

Curry laksa with white cooked chicken

I left China to study in Australia in late 1980s. When I was in University, I worked in an Asian restaurant during some evenings, waiting at tables together with a lovely young lady called Linda. Linda was from Malaysia, a medical student at University of New South Wales. Petite, quiet and super intelligent, Linda had a wonderful personality with gentleness and calm. She always listened patiently to my grunts and dropped a few humorous comments from time to time. One day, she went to the kitchen and made us Malaysian curry laksa for supper. The laska was very different to the Thai version I had at various restaurant. When I was enjoying the laksa, I  felt that I really missed home, not my own, but Linda’s home at Malaysia, and it was a wonderful feeling.

Rice cake with potato, cheddar cheese, rosemary and coconut milk (low FODMAP, gluten free)

Last week I attempted a recipe of Spanish potato croquettes. The lovely potato balls fell apart while I shallow fried them. But gosh, they tasted so good.

This week I am trying out a rice cake with potato & cheese. And they tasted absolutely delicious.

Asian spiced chicken drumsticks (FODMAP friendly, gluten free)

Growing up in Southern China, chicken drumsticks were the most desirable parts of a chicken. This is because the meat on the drumsticks is juicy and flavorsome, whereas chicken breast meat is thick and it is difficult to infuse flavors into the meat.

I love baking drumsticks in an oven bag –  just taste extra juicy and pack of flavors.

Here is my version of an Asian chicken drumstick recipe with soy, ginger, chills, coriander, turmeric, coconut milk, sesame oil and tomatoes.

Wok fried ‘dry’ beef rice noodles 干炒牛河

This is one of my all time favorite – growing up in Southern China there were stalls at nearly every street selling these aromatic & mouth watering wok fry noodles. The smell of soy sauce sizzling in a wok was absolutely amazing.  This noodle dish is called ‘dry fried’ – when you eat the noodles, there should be no sauce visible. The sauce should have been ‘sizzled up’ by the wok’s high heat or in Chinese, it is call ‘wok-chi’.

Chicken & quinoa slices with coconut milk (low FODMAP, gluten free)

With the recent food event at my little boy’s school which required months of preparation, I had been slow on developing FODMAP friendly recipes. This week I did 3 dishes & here is one of them – chicken & quinoa slices with fish sauce & coconut milk, first steamed, then sliced and pan fried.
