Bitter melon 苦瓜 with beef, chili and oyster sauce

I am a big fan of bitter melon for reasons unknown to myself. I was fascinated by it the day that my mum said eating bitter melon at Chinese New Year would bring ahead a year of hardship.

In restaurants, stir fry bitter melon is often cooked with black bean. I however like it with chili and oyster sauce so the melon preserves most of its bitterness.

Bitter melon with oyster sauce and chili

Recipe is as follow:


  • 1 bitter melon, approx 500g, cut in half, remove seeds, sliced
  • 150g stir fry beef (for example, topside)
  • 1 chili, remove seeds, sliced
  • 1/4 capsicum,  sliced
  • 1 clove of garlic, sliced
  • slice of ginger, julienne
  • 1 tbs oyster sauce
  • 1 tbs sesame oil
  • 1 tbs cooking wine
  • cooking oil


In a frying pan, bring some cooking oil to medium heat, add garlic, ginger & chili, stir fry briefly; add beef, stir fry until the beef is mostly cooked; add bitter melon and sugar, stir fry briefly; add oyster sauce and sesame oil, stir fry for 1-2 minutes; add wine and capcicum,  stir, put a lid over the frying pan for 1-2 minutes or until the bitter melon is cooked to your liking.
