Ingredients
- 1 kg chicken thigh fillet, sliced
- 1 tbsp. Korean pepper flake (available from Korean grocery stores or selected Asian grocery stores)
- 5g of ginger, minced
- 3 clove of garlic, minced
- 1 tbsp. apricot jam
- 1 tbsp. fish sauce
- Cooking oil, to brush the gridle
- 2 tsp dark soy sauce
- Green shallot, sliced, to garnish (optional)
- Sliced chili, to garnish (optional)
Method
- Marinate the chicken with pepper flake, ginger, garlic, apricot jam and fish sauce
- In small bathes, brush the gridle with some cooking oil, grill the chicken pieces until cooked
- Return the chicken to a hot wok, splash the dark soy sauce on top of the chicken and toss
- Garnish with sliced green shallot and/or sliced chili (optional)
