Grilled chicken fillets with Korean pepper, ginger, garlic, apricot jam, fish sauce and dark soy sauce.

Grilled chicken with Korean pepper

Ingredients

  • 1 kg chicken thigh fillet, sliced
  • 1 tbsp. Korean pepper flake (available from Korean grocery stores or selected Asian grocery stores)
  • 5g of ginger, minced
  • 3 clove of garlic, minced
  • 1 tbsp. apricot jam
  • 1 tbsp. fish sauce
  • Cooking oil, to brush the gridle
  • 2 tsp dark soy sauce
  • Green shallot, sliced, to garnish (optional)
  • Sliced chili, to garnish (optional)

Method

  • Marinate the chicken with pepper flake, ginger, garlic, apricot jam and fish sauce
  • In small bathes, brush the gridle with some cooking oil, grill the chicken pieces until cooked
  • Return the chicken to a hot wok, splash the dark soy sauce on top of the chicken and toss
  • Garnish with sliced green shallot and/or sliced chili (optional)
