Grilled chicken fillets with Korean pepper, ginger, garlic, apricot jam, fish sauce and dark soy sauce.

Ingredients

  • 250 g chicken thigh fillet, sliced
  • 1 tsp Korean pepper flake
  • a few slices of ginger, minced
  • 1-2 clove of garlic, minced
  • 2 tsp apricot jam
  • 2 tsp fish sauce
  • a splash of dark soy sauce
  • a little cooking oil
  • green shallot, sliced, to garnish (optional)
  • sliced chili, to garnish (optional)

Method

  • Marinate the chicken with pepper flake, ginger, garlic, apricot jam and fish sauce
  • Brush the gridle with some cooking oil, bring it to high heat, grill the chicken pieces until cooked; splash the dark soy sauce over the chicken and toss
  • Garnish with sliced green shallot and/or sliced chili (optional)
