Stir fry of tomato and egg with oyster sauce (番茄炒蛋) (FODMAP friendly)

This is one of my childhood favorite – a dish that can be cooked in 10 minutes. It is sweet, sour, juicy and tender.

Ingredients

  • 2 tomatoes, cut into pieces
  • 2 eggs, 
  • 1 tsp sugar
  • 1 tsp oyster sauce
  • cooking oil

Method

  • Heat up some cooking oil in a frying pan, lightly scramble the 2 eggs; push the eggs to the sides of the frying pan
  • Heat up a little cooking oil in the middle of the frying pan, add tomato pieces, sauté briefly, add sugar and oyster sauce, stir well
  • Mix the eggs with tomatoes; ready to serve.
