It’s a 10-minute meal:
- Crack two eggs and shallow fry them in hot cooking oil. Place the eggs on a plate.
- In the same hot frying pan, add some green shallots (scallions), toss briefly, and place them on top of the eggs.
- Drizzle a small splash of dark soy sauce on top of the eggs.
The dish looked colorful and delicious.
- For a FODMAP-friendly version, use only the green part of the scallion; for a gluten-free option, use gluten-free soy sauce
