Green beans and eggs ‘chop suey’ stir fry with oyster sauce (low FODMAP)

When I was a child, this was a popular dish at our house  – grandmother had a coup of egg laying chicken on the roof top terrace, and green beans were always fresh and cheap. The soft eggs compliments the crunchiness of bean; the oyster sauce enhances the freshness of the beans & eggs. So simple, quick & tasty – goes really well with a small bowl of hot rice.

Green beans & eggs ‘chop suey’ with oyster sauce

Recipe is as follow: (Serves 3 as a low FODMAP recipe)

Ingredients

  • 250g green beans, diced
  • 50g capsicum, diced
  • 2 eggs, scrambled & sliced
  • 2 tsp oyster sauce
  • cooking oil
  • salt & pepper to taste

Method

In a frying pan, heat up some cooking oil; add green beans, stir fry for 2-3 minutes or until beans are nearly cooked; add oyster sauce, mix well; add eggs, salt & pepper; mix well; to serve.

You may like to serve this recipe with some rice and/or another meat dish.
