Chinese mushrooms, fresh mushrooms and capsicum stir fry with oyster sauce

Chinese mushroom, fresh mushroom and capsicum stir fry, with oyster sauce and sesame oil.

Ingredients

  • 4-6 Chinese mushrooms, soaked in hot water for 20-30 minutes (may be longer depending on which type of the mushroom), remove stems, thinly sliced
  • some fresh button mushroom, thinly sliced
  • 1 capsicum, deveined, seeds removed, thinly sliced
  • a small slice of ginger, julienned
  • 2 tsp oyster sauce
  • 1 tsp sesame oil
  • salt and pepper to taste
  • cooking oil
  • sliced green shallot, to garnish
  • sesame seeds, toasted, to garnish

Method

  • Heat up some cooking oil in a frying pan, add ginger and Chinese mushroom, sauté until aromatic; add oyster sauce, sesame oil, salt and pepper to taste, sauté briefly; add fresh mushrooms, sauté briefly; add capsicum, toss; transfer to a serving plate
  • Garnish with sliced green shallot and toasted sesame seeds
