Aromatic cinnamon, lemon and ginger tea (low FODMAP)

A few days ago, my neighbor’s girl dropped by in the late afternoon. We made some simple noodles together. Her mum had been unwell for a few weeks.  So it was nice for the keen 11 year old to learn to cook a meal for the family.

When she popped over again today, she brought me a few lemons from their trees.  So I made this simple, gentle and aromatic tea with the lemons – perfect to enjoy on a rainy autumn afternoon.

 

Cinnamon, lemon and ginger tea

Method is as follows:

(Serve 1 as a low FODMAP drink)

Ingredients

  • 2 sticks of cinnamon / cinnamon bark
  • 1/4 lemon, sliced
  • 10-15g ginger, sliced
  • 2 tsp raw sugar
  • 1.5 cup of water

Method

  • In a sauce pan, bring cinnamon, ginger and water to boil, simmer for 5 minutes;  add sugar and lemon; remove the pan from the stove.
  • Leave the drink in the sauce pan to simmer for another 5 minutes; serve warm or lightly chilled.
