Simple, tasty and moist stir-fried prawns with eggs.
Ingredients
- 4 large eggs, lightly whisked with chopsticks
- a small bunch of garlic chive, approx. 20-30 stems, cut to 1-inch length
- a few large prawns, peeled, deveined, diced , approx. 100g
- 1 tsp sesame oil
- salt & white pepper, to taste
- cooking oil
Method
- Place eggs, garlic chive and sesame oil in a bowl, mix well; season with salt and pepper;
- Heat up some cooking oil in a frying pan, pan fry the prawns briefly over medium heat; Turn the heat down to low, pour in the egg mixture; scramble the mixture by slowly pushing the eggs into the center using a spectacular, rotating clock wise (or anti-clock wise) until the eggs are just cooked; serve warm
