Scrambled eggs with garlic chive and prawns (gluten free)

Have you ever been to a suburban Chinese restaurant that serves a prawn omelette that is dry and uninteresting? Try this simple, tasty and moist scramble eggs with garlic chive and prawns and I bet you will never look back.

Scrambled eggs with garlic chive and prawns

Recipe is as follows: 

Ingredients

  • 4 large eggs, break up the yolk
  • 40g garlic chive, chopped
  • 3 large prawns, peeled, cleaned, diced , approx 100g
  • 1 tsp sesame oil
  • Salt & white pepper, to taste
  • Cooking oil

Method

  • Place eggs, garlic chive and sesame oil in a bowl, mix well; season with salt and pepper;
  • Heat up some cooking oil in a frying pan, pan fry the prawns briefly over medium heat;  Turn the heat down to low, pour in the egg mixture; scramble the mixture by slowly pushing the eggs into the center using a spectacular, rotating clock wise (or anti-clock wise) until the eggs are just cooked; serve warm
