Steamed oysters with soy sauce, sesame oil, shallot, coriander and chilies

Steamed oysters with green shallot, coriander and chilies, a soy sauce, sesame oil and wine dressing, topped with a splash of hot oil

I love my oysters lightly steamed (approximately 1 minute of steaming depending on size), topped with sliced shallot, coriander and chili, dressed with a white wine, soy sauce and sesame oil sauce, then finish with a hot splash of cooking oil on top of the herbs to bring out the flavors & freshness. It is so simple and delicious.

Ingredients

  • 9 fresh large oysters
  • some green shallot, thinly sliced
  • some coriander, roughly slice
  • 1 chili, seeds removed, thinly sliced
  • some cooking oil
Dressing / sauce
  • 1 tbsp. white wine (optional)
  • 1 tbsp. soy sauce
  • 1 tsp sesame oil

Method

  • Bring water in a steamer to boil
  • Lay the oysters on a plate; steam for 1 minute in the steamer; remove from heat
  • Mix the white wine, soy sauce and sesame oil; drizzle the sauce over the oyster (depending on the size of the oysters, you may not need all the sauce)
  • Garnish the oysters with green shallot, coriander, and chili
  • In a small saucepan, bring some cooking oil to high heat; drizzle the cooking oil on top of the garnish on the oyster – the oil should be sufficiently hot and you should hear the sizzling
