Fried rice with eggs, ginger, soy sauce and sesame oil.
Ingredients
(Serves 3)
- 3 cup of cooked basmati rice, fluffed
- 3 eggs
- a little ginger (~3g), minced
- 1 tsp soy sauce (I use dark soy sauce)
- 1 tsp sesame oil
- salt and pepper to taste
- cooking oil
- green part of the shallot, sliced, to garnish
Method
- Bring some cooking oil in a frying pan to medium heat, scramble the eggs; roughly break up the eggs up in chunks; transfer the eggs to a plate
- Add some cooking oil in the frying pan again, add ginger, sauté briefly until the ginger is lightly brown; add the cooked rice, break up any chunks; add soy sauce and sesame oil, mix well; add eggs, mix well; add salt and pepper to taste
- Garnish with sliced green shallot to serve
